Truffle laminate (Tuber aestivum) in olive oil. Produced by M. Cros Boj in Monroyo (Teruel). The truffles are fungi hypogea, ie their carpóforos or fruiting bodies are buried. Are mycorrhizal fungi, living and always associated with some species of trees and shrubs, favoring each other in their development. The fruiting bodies of truffles is what is collected and what we call truffle. Carpóforos mature in the winter season after harvesting conditions of humidity and temperatures suitable.
